Beyond the toasts and ship launchings, Champagne has a place at every dinner table. Belle Epoque Champagne especially pairs very well with a variety of dishes such as gouda and almonds; smoked salmon, lemon-herb blinis, crème frâiche and caviar and saffron risotta with prawns and sweet pepper romesco; scallops ceviche with lemon. Magnificent greenish gold in colour with a chrystalline brightness and a strong, intense effervescence with fine and regular bubbles. Highly aromatic and packed with notes of white flowers, honey, lemon, fresh plum and pineapple. The palate confirms the complexity and richness of the bouquet with an initial lively freshness leading into a rounded palate that displays notes of honey, vanilla and short bread right through the long, long finish. Truly inspiring.
